It's time to wipe off the dust from my June 2007 gluten-free chocolate chip cookie dough recipe and try it again because the National Academy of Sports Medicine has asked me to create a gluten-free cookie. We'll see if ours passes their taste test.
A couple of years ago, a mother asked if i could create a gluten free cookie that was a "real cookie." It was for her 12-year-old daugher who has Celiac disease. The mother did not want a biscotti or a pseudo-cookie but one that tasted, looked and felt like a DeLuscious cookie. My June 2007 recipe got a green light from the 12 year-old and a few other acquaintances who also suffer with Celiac disease.
I'm not sure whether the dough I made in 2007 was beginner's luck or a recipe i can actually use, but tomorrow's the test.
